White tea is one of the most minimally processed teas, offering a remarkable range of flavors from sweet and delicate to rich, earthy notes reminiscent of forest leaves. The finest and most delicate white teas, like Silver Needle, are crafted from unopened buds harvested in early spring. Other styles, such as those made in Yunnan, are picked using the traditional pu'er standard of two leaves and a bud, yielding a fuller body with greater depth and complexity.
